It's hitting later than yesterday, so I must be better, but I'm so sleepy. Yesterday I slept on the sofa with both children sitting on me watching telly. Perhaps I have to do that again. I'm swaying on my feet here.

The coconut tarts were a really weird texture so I crumbled them and mixed them with sugar and they are topping a peach and apple crumble in the oven now. We just ate the custard as was.

I love the taste of coconut oil.

Here you can get solid coconut fat (usually packaged in a 250g tetra-pak) in Caribbean food shops. It has a very similar texture & consistency to lard. I wonder it that would work better for pastry than oil?

Oh - coconut oil *is* solid. But it melts more invisibly (and faster, I think) on toast than butter or marg do. It's amazing on toast, actually. Especially with marmalade.

In this household, fast melting (= soggy toast) is a distinct minus. The key to perfect toast is getting it buttered and eaten really fast, so you can have hot toast with butter / marge that hasn't melted yet.
