Cup Cake

Takes almost ten minutes, but would be faster if you have stronger wrists. Many thanks to [livejournal.com profile] micheinnz for the pointer.


5-MINUTE CHOCOLATE MUG CAKE
1 Coffee Mug
4 tablespoons flour (that's plain flour, not self-rising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
some nuts (optional)
Small splash of vanilla
Add dry ingredients to mug, and mix well. Add the egg and mix
thoroughly. Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla, and mix again.
Put your mug in the microwave and cook for 3 minutes on high. The cake
will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
EAT!


I'm going to see what happens if I swap out some of the oil and sugar for apple juice concentrate, something we have in the house usually. Cakes which call for liquid oil tend to taste, well, oily, to me, and I don't like that. Also, I bet it would work just as well with wholemeal flour. I won't try it today because I ate a whole one already (well, I shared it with the girls, and then made them their own one).

This is going to make PMS much easier to bear.

when you say coffee mug, what size do you mean? just a large mug?

Was it you that asked about making ice cream with Bird's custard? If so, have you tried it? did it work?

Kathleen makes these, and they are nummy indeed - word of warning though, wash the mug quickly, otherwise the remaining cake sets like concrete.

Not at all bad. I dunno if it's the oil (we used olive oil) or the GF flour that made it slightly rubbery, or if it's just like that.
We did one a second one in a bowl and it didn't really rise but was perfectly edible, esp with ice cream. It was easier for Jack to do the mixing in a bowl, and the first one had risen alarmingly... bigger mug or split the mix between two, I think.
We're going to give the recipe to Jack's school, it's ideal for the kids' cookery sessions.

Oh, yeh: we used drinking chocolate instead of proper cocoa, may not have helped.

I can tell just by reading that this beats my other chocolate microwave cake recipe.
