A dhosa is a (usually rice, I think) pancake and masala seems to mean mixture - garam masala is a spice mixture, for example.
I am very jealous of your masala dhosas. There are some good indian food places in Edinburgh, but not in the areas I tend to wander with the baby. I did have diary free Armenian lential soup yesterday, which was lovely, so it's not all bad.
