This morning's post brought an acknowledgement of my resignation and no attempt to persuade me otherwise. I cried.

Are they legally *allowed* to try and convince you to stay - wouldn't that be some kind of coercion/harrassment?

I think it very much depends on how they try and convince you to stay. Offering a log more money, and changing what you have to do to get rid of the problems should be legal.
It's only if they use threats of bad references that there is a problem.
