3 eggs
6 tbsp oat milk
1 tbsp fructose syrup
1/4 pint raspberries
3 sliced strawberries

Whisk wet ingredients together with a fork, pour into hot pan. When the bottom is cooked enough to support it, lay the fruit carefully in half the pan (so you can fold it) and cook carefully.

Mine hasn't finished yet but how wrong could it go?

I think the only way you could improve it would be the addition of chocolate/chocolate sauce. I'm hungry now.

Fruit omellette. Hmm. Intriguing.

By the way, I keep meaning to ask you: you often mention Rob making clafouti, but I only know clafouti as a cheesecake-like thing with cherries. How do you guys make it dairy free?

Yeah, I've been and looked at some recipes and they all are, indeed, as you describe. Strange that I should have always thought of it as a cheesecake... Do you use oil instead of butter, or just skip the fat altogether?
