I think nutmeg is OK on kale but not half as good as it is with spinach. I prefer garlic, and lots of it, personally, but that might not be so guest-friendly. Paprika (maybe smoked?) and olive oil would probably be good, as chorizo works well with kale, but I'm not sure how well that would work with the shepherd's pie.
